Quick reply

For four servings of saffron risotto, you need 320 grams of risotto rice, 0.2 grams of saffron threads, and up to 1.2 liters of hot vegetable broth. Let the saffron steep in a little broth for 15 minutes and add the infusion to the rice during the last five to seven minutes. Stir in the butter and Parmesan off the heat – this makes the risotto creamy without cream.

  • 0.2 g saffron for four servings

  • Carnaroli holds its bite particularly well; Arborio softens more quickly.

  • Always add hot broth

  • Stir in the saffron broth during the last 5–7 minutes

  • Work in the butter and Parmesan away from the heat

The amount of broth is a guideline: The key is that the rice is creamy on the outside and still slightly firm in the center.

Ingredients for 4 servings

4 servings
  • 320 g Risotto rice (Carnaroli or Arborio)
  • 0,2 g Saffron threads
  • 1200 ml mild vegetable broth (hot; depending on the trip, there will be some left over)
  • 80 g Onion (very finely diced)
  • 120 ml dry white wine
  • 60 g Parmesan (freshly grated)
  • 40 g Butter (cold and diced)
  • 2 EN Olive oil
  • as needed Salt and black pepper
The most reliable way to weigh saffron is by counting the threads, as their length and weight can vary. Season with salt and pepper only at the end, to taste.

Preparation

  1. Let the saffron steep

Lightly grind the saffron threads in a mortar, pour over about 60 milliliters of hot broth, and let steep covered. The liquid turns a deep golden yellow.

    15 minutes
  2. Keep broth hot

Heat the remaining vegetable broth and keep it just below boiling. This ensures that the cooking process is not interrupted when adding it.

  3. Sweat the onion

Heat olive oil in a wide pan. Sauté the onion over medium heat until translucent, without browning it.

    3 minutes
  4. Toast rice

Add the risotto rice and heat while stirring until the grains look slightly translucent on the outside and crackle gently.

    2 minutes
  5. Deglaze with wine

Add white wine and boil down almost completely while stirring.

    2 minutes
  6. Cook risotto

Add hot broth in portions. Stir regularly and only add more once most of the liquid has been absorbed. Taste for the first time after about 13 minutes.

    18–20 minutes
  7. Stir in the saffron

Stir in the saffron liquid thoroughly during the last five to seven minutes. Continue cooking until the rice is creamy on the outside and still al dente at the core.

    5–7 minutes
  8. Mantecatura

Remove the pot from the heat. Vigorously stir in cold butter and Parmesan, cover and let rest for two minutes, and only then season with salt and pepper to taste.

Which rice is suitable for saffron risotto?

For creamy saffron risotto, you need a starchy short-grain rice. Carnaroli stays al dente for a relatively long time and allows for a little more cooking time. Arborio is easier to find and releases starch quickly, but also becomes soft more quickly. Vialone Nano is another good choice.

Long-grain, basmati, and parboiled rice do not produce the same consistency. The creaminess comes from the starch of the rice, the broth added gradually, and the mantecatura – not from cream.

How much saffron goes into the risotto?

For 320 grams of rice, we use 0.2 grams of saffron threads. This amount provides a distinct color and clear aroma without making the dish unnecessarily bitter. Weigh saffron with a precision scale if possible: counting threads is inaccurate because length and weight vary greatly.

If you would like to measure out saffron for other dishes as well, the guide How to Dose Saffron Correctly will help.

Steeping saffron threads in hot broth for risotto
Slightly crushed saffron threads release their color and aroma particularly evenly into hot broth.

Why saffron should be steeped in broth beforehand

Lightly crushed saffron threads release their color and aroma more evenly into warm liquid. Pour over them a small amount of hot, non-boiling broth and cover the container. After about 15 minutes, a rich golden infusion will have formed.

Add the entire infusion to the rice only towards the end of the cooking time. This distributes the color evenly, while the saffron aroma is exposed to the heat for a shorter period.

Mantecatura: How to make creamy risotto without cream

Remove the pan from the heat before working in cold butter and freshly grated Parmesan. Stirring vigorously combines the fat, starch, and remaining liquid into a creamy emulsion.

The finished risotto should flow softly and spread easily on a flat plate. If it is too firm, stir in one more small ladleful of hot broth. If it is too runny, leave it to rest uncovered for one minute.

Options: without wine, vegetarian or vegan

  • Without wine: Replace the wine with broth and stir in one to two teaspoons of lemon juice at the end for freshness.
  • Vegetarian: Use vegetable broth and a vegetarian hard cheese made without animal rennet.
  • Vegan: Replace the butter with a mild plant-based fat and use a vegan grated alternative instead of Parmesan.
  • As a side dish: Allow 240 grams of rice for four people and slightly reduce the amount of saffron depending on the desired intensity.

Frequently Asked Questions about Saffron Risotto

Can I use saffron powder instead of saffron threads?

Yes, if it is pure saffron powder. Use the weight in the recipe and the information on the packaging as a guide. Powder disperses faster, but it is harder to visually inspect for quality before purchasing.

Does saffron risotto need white wine?

No. Replace the 120 milliliters of wine with broth and stir in one to two teaspoons of lemon juice at the end. This will give the dish some acidity even without the wine.

Why isn't my risotto getting creamy?

Common causes are an unsuitable rice variety, too little movement, cold broth, or a skipped mantecatura. Stir in the butter and Parmesan only after removing from the heat.

When should the saffron be added to the risotto?

The prepared saffron infusion is added to the rice during the last five to seven minutes of cooking time. This allows the color to distribute evenly and prevents the aroma from being heated for longer than necessary.

Can I prepare saffron risotto in advance?

It is best served fresh. For guests, you can parcook the rice about halfway, let it cool quickly in a flat layer, and finish it just before serving with hot broth, saffron stock, and mantecatura.
