Quick reply

For four servings of simple saffron rice, you will need 300 grams of basmati rice and 0.15 grams of saffron threads. First, prepare a saffron infusion by steeping the saffron for 15 minutes. Cook the washed rice in hot broth for twelve minutes over the lowest heat, then let it rest covered for ten minutes. Only then should you fluff it with a fork.

  • 300 g long-grain rice makes four side-dish servings

  • Weigh out 0.15 g of saffron and let it steep for 15 minutes

  • 500 ml broth plus 60 ml infusion as the starting quantity

  • Cook for 12 minutes and then let rest for 10 minutes

  • Do not stir: This keeps the grains looser

The amount of liquid is a reliable starting point, but must be adjusted to the type of rice and the pot. With a new brand of rice, always double-check the instructions on the package.

Ingredients for 4 servings

4 servings
  • 300 g Basmati rice (or other long-grain rice)
  • 0,15 g Saffron threads
  • 60 ml warm water (for the saffron broth)
  • 500 ml mild vegetable broth (hot; slightly more depending on the type of rice)
  • 1 small Onion (very finely diced)
  • 2 EN Olive oil (or 25 g butter)
  • 1/2 TL Salt (season to taste with broth)
  • 1 EN flat-leaf parsley (optional, finely chopped)
Please weigh the saffron rather than counting the threads. Broths vary greatly in salt content; therefore, only add salt after tasting.

Preparation

  1. Wash rice

Carefully stir the rice in a bowl of cold water and drain. Repeat two or three times until the water is only slightly cloudy, then drain well.

    5 minutes
  2. Prepare saffron infusion

Gently crush the saffron threads between your fingers or in a mortar, pour over 60 milliliters of warm, not boiling water, and let steep covered.

    15 minutes
  3. Sweat the onion

Heat oil or butter in a saucepan with a tight-fitting lid. Sauté the onion over medium heat until translucent, without browning it.

    3 minutes
  4. Briefly sauté the rice

Add the drained rice and gently toss for one to two minutes until the grains glisten. Do not brown too much.

    2 minutes
  5. Add liquid

Stir in hot broth, saffron infusion and salt. Distribute evenly once and bring to a vigorous boil.

    2 minutes
  6. Rinse rice

Immediately reduce the heat to the lowest setting, close the lid and cook gently for twelve minutes. Do not stir during this time and keep the lid closed as much as possible.

    12 minutes
  7. Rest and loosen up

Remove the pot from the stove and let the rice rest, covered, for another ten minutes. Then fluff with a fork from the edges toward the center and fold in parsley if desired.

What makes good saffron rice?

Good saffron rice combines fluffy, fully cooked rice grains with a distinct but not bitter saffron aroma. It is golden yellow, but does not need to be brightly or perfectly evenly colored. Color alone says little about the quantity or quality used.

This basic recipe uses the absorption method in a closed pot. It is uncomplicated, requires only one cooking vessel, and is suitable as a side dish for vegetables, fish, chicken, and braised dishes. Unlike risotto, the rice is not stirred continuously; unlike Persian Chelow, it is not parboiled and drained.

Basic recipe instead of a fixed national cuisine

Saffron rice appears in different cuisines and is prepared with spices, dried fruit, nuts, or a crust depending on the region. Our recipe therefore does not claim any traditional exclusivity. It provides a neutral, reproducible base that you can adapt to your main dish.

For the Persian method with separate white and golden rice grains as well as a crispy bottom, you will find a separate recipe in the magazine for Persian saffron rice with Tahdig.

Which rice is suitable for saffron rice?

Long-grain basmati rice is particularly convenient for this recipe. The slender grains remain well separated when the correct amount of water is used and bring their own subtle, nutty aroma. Jasmine rice also works, but has a different fragrance and can turn out slightly softer.

Parboiled long-grain rice is very forgiving, but takes on the aroma of saffron less elegantly. Risotto rice does not belong in this basic recipe: Its starch is expressly intended for a creamy consistency. Paella rice, on the other hand, requires a wide pan and a different cooking method.

Why wash rice?

Washing removes excess starch from the surface. This reduces sticking without having to remove every starch molecule. Move the grains gently so that they do not break. After two to three rinses, the water may remain slightly cloudy.

Let the washed rice drain well in a fine sieve. Too much residual cold water alters the calculated ratio of rice to broth. This small step makes the cooking time more reproducible.

After the soaking time, the liquid has been absorbed. The rice rests for another ten minutes with the lid closed and is only then gently fluffed.

How much saffron does saffron rice need?

For 300 grams of dry rice, we use 0.15 grams of saffron threads. This corresponds to 0.0375 grams per serving when making four side dishes. The weight is more precise than a count of threads, as length, thickness, and the proportion of broken pieces vary.

More saffron does not automatically mean a better result. An excessive amount can make the flavor overpowering and bitter. With a new batch, you can start with 0.12 grams and adjust the next time you cook. The article Saffron dosage: amount per person provides examples of other dishes.

Prepare saffron infusion

Lightly crush the threads and pour warm, not boiling, water over them. Fifteen minutes under a lid is sufficient for this recipe. The water absorbs the color and aroma and then distributes the small amount of saffron throughout the entire pot.

Add the entire infusion, including the fine particles, to the rice. Dry saffron threads should not be used as a garnish on the finished dish. You can find a detailed explanation of temperature and steeping time under Soaking saffron properly.

The right ratio of rice to liquid

The combination of 500 milliliters of broth and 60 milliliters of saffron infusion is a practical starting point for 300 grams of basmati rice. However, the diameter of the pot, the lid, the brand of rice, and the stove all affect how much water evaporates. A heavy pot with a tight-fitting lid often requires less liquid than a light pot with a loose-fitting lid.

Therefore, check the package instructions. If the manufacturer recommends significantly less liquid, reduce the amount of broth first, not the saffron infusion. This keeps the distribution of saffron consistent. The broth must be hot so that the temperature rises quickly again after it is added.

Why the lid must remain closed

After the rice has come to a boil, the steaming method uses low heat and trapped steam. Opening the lid lowers the temperature and allows moisture to escape. Do not stir: movement releases additional starch and can break the grains.

After twelve minutes, remove the pot from the stove without opening the lid. The ten-minute resting period distributes the remaining moisture and finishes the cooking process. Only then should you use a fork to fluff the grains.

How to Serve and Pair Saffron Rice

Serve the saffron rice as fresh as possible and fluff it gently. Do not press it into a compact shape if you want to show the separate grains. Parsley is optional and should be used sparingly; it should not overpower the saffron.

The rice pairs well with roasted vegetables, mushrooms, mildly seasoned fish, chicken, or a stew. Tangy components such as yogurt, lemon sauce, or a tomato salad provide a good contrast. It is better to add lemon juice to the accompanying dish or only to the plate, as acidity alters the perception of the saffron aroma.

Menu Planning and Portion Size

The 300 grams of dry rice make four generous side portions or three smaller main meals with vegetables. For a buffet, you can calculate with 60 to 70 grams of dry rice per person, provided several side dishes are available.

Do not automatically double the recipe in the same pot. A thicker layer of rice cooks differently and may require more time. For eight portions, two pots or a significantly wider cooking vessel are more reliable.

Fixing Common Saffron Rice Mistakes

The rice is sticky: It may not have been washed enough, may have been stirred too often, or may have been cooked with too much liquid. Do not fluff it aggressively; instead, let the excess steam escape for a few minutes without a lid. Next time, reduce the broth by 30 to 50 milliliters.

The rice is still hard: Pour two to three tablespoons of hot water along the inside edge of the pot, cover with the lid, and cook for another five minutes over the lowest heat. Then let it rest again.

The bottom is burning: The heat was too high after the liquid came to a boil, or the bottom of the pot is too thin. Carefully remove the top layer of rice without mixing in any dark patches. Next time, switch to the lowest heat setting sooner.

The saffron flavor is weak: First, check the accuracy of the scale, steeping time, and storage. Adding more dried threads to the finished rice will not help. Prepare the infusion covered and use it all.

The rice is too salty: The broth and additional salt added together. Use low-sodium broth and taste the hot liquid before pouring it in.

Prepare saffron rice and store leftovers

You can prepare the saffron broth a few hours in advance and store it covered in the refrigerator. You should only wash the rice shortly before cooking and let it drain well. Cooked saffron rice can wait for ten to fifteen minutes in a closed pot without active heat; keeping it warm for longer will dry it out.

Spread any leftovers quickly in a shallow container, let them steam briefly, and place them covered in the refrigerator. Use them promptly and reheat them thoroughly. One tablespoon of water per serving will create a little steam again when reheating.

Repurpose leftovers effectively

Cold saffron rice is suitable for a vegetable rice stir-fry or as a filling for peppers. Only brown it once all other ingredients are prepared, so that it is only heated for as long as necessary. For rice salad, it should be completely cooled.

Note the rice brand, amount of liquid, and stove setting on the first try. These three pieces of information help more than a rigid minute rule if you want to cook the basic recipe regularly.

Vary saffron rice

  • Vegan: Use olive oil and vegetable broth as in the basic recipe.
  • With butter: Replace the olive oil with 25 grams of butter; the result will be rounder and slightly richer.
  • With vegetables: Cook peas or finely diced carrots separately and fold them in only after the resting period.
  • With nuts: Dry-roast almond slivers or pistachios without saffron threads and serve separately.
  • Fruity: Briefly toss a few barberries or raisins in butter and place on the rice.
  • For two servings: Halve all quantities and use a smaller pot; the cooking time remains similar.

Do not change the amount of liquid and the type of rice at the same time. This way you can tell which adjustment actually affects the texture and flavor.

Frequently Asked Questions about Saffron Rice

How much saffron do you need for four servings of saffron rice?

This recipe uses 0.15 grams of saffron threads per 300 grams of dry rice. Weigh the amount using a precision scale instead of counting threads.

Do you need to soak saffron for saffron rice?

A warm saffron infusion distributes the small amount more evenly. The lightly crushed threads steep here for 15 minutes in 60 milliliters of warm water.
